Vanilla Almond Granola

Getting nippy out there, here is a quick and easy bake to warm up your home.
3 cups of old fashioned oatmeal
1 cup of sliced almonds
1/2 cup of water
1/2 cup of sugar
1/4 teaspoon of salt
1/4 cup canola oil
1 tablespoon of vanilla extract
– Pre-heat oven to 200 degrees, Line a large, rimmed cookie sheet with parchment paper
– In a large bowl, mix the oats and almonds together (dry mixture)
– In a small saucepan over medium heat, stir in sugar and salt in the water. stir over heat till the sugar has dissolved. Remove the pan from the heat and stir in the canola oil and vanilla extract (liquid mixture)
– pour the liquid mixture into the dry mixture; stir until thoroughly mixed
– Spread the mixture unto the cookie sheet and bake for 2 hours or dry to touch, DO NOT STIR WHILE BAKING!
– remove from oven and let cool before breaking apart into chunks
– store the rest in an airtight container.
.Pour in some milk over it for a crunchy homemade cereal, sprinkle  the granola over some yogurt, add  slices of apple a good serving of fiber or add orange slices for  a punch of vitamin C.

    Yep, you can use honey or agave nectar.

    I cannot do greek yogurt without granola. I'm so used to it that anything else seems wrong. Plus I'm one of those people who needs "crunch". My favourite is Trader Joe's Ginger Granola – it's all I buy

    I love this recipe!!! but I also add Flax seed (Have to get my fiber in) and reduce the sugar.
